BOZOLUS-BOZZURUM .... or BIANCOSPINO in Italian
This was the ancient name of the city of Bossolasco in the second century BC Under the rule of the
former Roman Empire.
In the historical center of the medieval era, in a building of the 16th century
expertly renovated is the restaurant-wine bar "al biancospino (the hawthorn)".
A cozy place, with a dual personality, more rustic and spartan in the wine bar, where you can enjoy a
glass of good wine accompanied by cold cuts and cheeses from the Langhe and from classic traditional
dishes to the succulent burgers (with local Fassona beef) or the International Club sandwiches.
The restaurant part instead comes up with the most elegant tables and comfortable chairs, furnished with
sober and essential style. The kitchen turns the exceptional local products (mostly sourced from local
farmers and breeders) in modern preparations, curious, sometimes provocative but sapientlyly proposed.
On the menu are always present fresh fish dishes, which are a main feature of the restaurant.
Every Friday it turns into a lounge bar where you can taste oysters, coquillage of various types and raw fish
accompanied by the splendid sparkling wine "Alta Langa" and for those who want to continue the night
there is a rich à la carte menu with fish dishes.
In summer a nice terrace allows you to eat outdoors, to stop by and enjoy a
homemade ice cream, a drink or a candlelight dinner inebriated by scents and flavors of the Langa.

After years of wandering collecting experiences in Italy and the world, I chose the piedmont, my region
of origin to open my first restaurant,
A challenge to myself, away from the spotlight and bustle of the city, in a difficult area, but rich in
resources and exceptional products.
I like to explore traditional raw materials, typical, historical dishes, perhaps forgotten to revive them and
appreciate in a new version.
